When the munchies start to tickle your tummy, usually mid-morning and mid-afternoon, turn this snack attack into a healthy nutrition opportunity. Today, I suggest these healthy energy balls with dried figs, dates and peanut butter, the dream!! I love how I can substitute sugar with natural ingredients for a healthier snack!
Let’s go for this super easy recipe!
Energy balls with figs and peanut butter
Prep time: 10 minutes
For around 10-12 energy balls
- 100g dried figs
- 100g dried dates
- 50g peanut butter
- 10g chia seeds
- 2 tsp. almond powder
- Place the figs, dates, chia seeds and peanut butter in a blender and blend.
- Shape small balls and roll them in the almond powder.
- Add a dab of peanut butter on top of each one and store them in the fridge.
- You can keep them in the fridge for 2 weeks but I’m already sure that you won’t hold out until this day because it’s perfection…so tasty!!
You can eat them either to boost your energy when you’re feeling a bit peckish or to accompany your coffee in the morning if you are not really hungry when you wake up!
