Thaï quinoa salad

[vc_row][vc_column][vc_column_text]Winter has settled in Melbourne but I still love salads and I enjoy making them as soon as a ray of sunshine appears. As I have a crush for quinoa and Thaï cuisine, I wanted to make a tasty salad with crunchy vegetables and a little gourmet sauce. Depending on the season, don’t hesitate to reproduce the same recipe with other vegetables such as fennel, white cabbage, diced roasted squash etc.

The Thaï touch is brought by the peanut butter salad dressing. If there are allergies, you can replace the peanut butter by another oilseed puree (cashew nut, almond), it will have a less pronounced flavor but you will keep the smooth side of the sauce 😉

And if you don’t like quinoa, don’t hesitate to replace it with another cereal, bulgur or rice will be perfect too 😉

Thaï quinoa salad


Prep time: 20 minutes.[/vc_column_text][vc_column_text css=”.vc_custom_1592887754024{padding-right: 20px !important;padding-left: 20px !important;}”]

Ingredients for 4 people:

  • 150 g quinoa
  • 1/2 red cabbage
  • 1 red capsicum
  • 2 carrots
  • 1 red onion
  • 50 g cashew nuts

For the Thaï sauce:

  • 60 g peanut butter
  • 1 tbsp honey
  • 3 tbsp soy sauce
  • 1 tbsp cider vinegar
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 tsp ground ginger
  • 3 tbsp water

Instructions:

  1. Cook the quinoa according to the instructions on the packet and then refresh under cold water. Drain and set aside in a salad bowl.
  2. Peel the carrots and seed the capsicum. Thinly slice the carrots, capsicum, red cabbage and red onion. Coarsely crush the cashew nuts. Mix with the quinoa.
  3. For the Thai salad dressing: put the peanut butter and honey in a bowl and spend 30 seconds in the microwave. Mix well and then add the rest of the ingredients. Season if needed and spread it over the salad.
